Bishoku Ryori. That means food that promotes beauty. Shirokiya which just opened its second outlet at CHIJMES continues to focus on food which is good from the inside-out.
Their highlight dish is the Bisyoku Nabe ($38.80 for 2-3 pax), a ‘beauty’ hot pot where the soup based made of special ‘chicken and collagen’ stock. Kurobata Kimuchi Nabe and Tomato Nabe soups are also available.
Do not be overly shocked if your soup comes in the form of a white blob that integrates into the pot when heat is released. Part of you may be thinking what that contains. My advice: Don’t think too much, just enjoy.
I would recommend the Kurobuta Shabu Shabu, where you get thinly sliced pork, also known as the ancient breed of pig known as Black Berkshire.
What I liked about the soup base was its lightness and not being overly salty, allowing you to savour the meat and vegetables in its full natural flavours.
Eat and get good skin? Many Shirokiya dishes contains ingredients with collagen, hyaluronic acid, capsaicin and lycopene – these may mean a lot to some, but foreign to others, but they supposedly promote cellular renewal, increase metabolism and neutralises free radical.
There are also new items introduced featuring more of shio-koji, salted rice malt which adds more umami flavors to various types of dishes.
Cold Tofu marinated with shio-koji ($8.80), Fresh Salmon Belly Yukky ($11.80), Bonito Fish Marinated with Ponzu Sauce ($7.80) and Steamed Rice in Traditional Tomato Sauce with melted cheese served in hot sauce bowl ($14) … already sounds oishii!
