Menbaka Fire Ramen – Launches Limited Prawn Ramen, The World’s First-Ever Ebi Fire Ramen

To celebrate its first-year anniversary in Singapore, Menbaka Fire Ramen located at Orchard Cineleisure has launched a limited-edition ebi (prawn) series.

The founder of Menbaka Fire Ramen Master Masamichi Miyazawa has specially created the “World’s First-ever Ebi Fire Ramen” all the way from Kyoto, after multiple rounds of experiment.

The famed ramen shop first opened in 1984 near Nijo Castle, by ramen master Masamichi Miyazawa who spent many years learning the ropes of ramen making.

The shop is currently is helmed by master Miyazawa’s son, Shin Miyazawa who brings along fiery passion – and he can speak casual English so you can always strike up a conversation if you see him.

Here’s what so special about Menbaka Fire Ramen: it is piled with abundant Kujo-Negi (green onions). After which, signature negi onion oil will be poured over the ramen bowl, which creates this tall, dramatic fire.

Pouring the burning oil just before eating, apparently helps to bring out the aroma and flavour of the green onions.

Do not worry about the fire, as no diners have ever been injured in their restaurant before.

Over in the Singapore outlet, there is a specially-installed kitchen exhaust to draw flames away from the direction of diners.

How it works: your handphones would be mounted on selfie-stands at the back of the counter. The chef will hit record button capturing your expressions (if you need something #forthegram). The actual dining will take place at the sit-down area of the restaurant.

The Ebi series features 3 new Ebi dishes and is available exclusively in Singapore, from now till 31 December 2021:

Ebi Fire Ramen (from $19.90)
This ramen features a three fresh prawns, tender chashu, and most importantly rich prawn broth.

The broth itself is cooked for many hours to extract the flavours out, elevated with prawn heads (which is baked till dry and crispy then added) and sake.

Compared to the usual shoyu broth, I think that many Singaporeans may find this more accustomed to their taste buds due to the multi-layered and sweet seafood flavours, along with that umami-ness.

Also, the flaming and soaring fire imparts the signature wok-hei to the soup, keep it warm throughout the meal.

Ebi Mazesoba (from $19.90)
This is a dry ramen version without the usual flaming. If you have tried Menbaka Fire Ramen and do not need to go through the process of seeing the fire again, then you can give this a go.

The Mazesoba was quite an appetising treat (especially if you enjoy this Japanese style of ”Bak Chor Mee”) topped with topped with prawns, sakura ebi, chashu, minced pork, nori strips, negi and onsen egg.

The highlight is the fragrant crustacean oil drizzled over, prepared by roasting then frying prawn shells, flower crabs and other ingredients.

Oh yes, before you give it a good mix, look out for the dollop of spicy dried shrimp paste at the side which give the noodles that kick and extra shiok-ness. So you may want to try the base level first, before tossing it all together.

Volcano Ebi Kakiage ($7.90)
A crispy tempura comprising of kawa ebi (Japanese river shrimp), carrots and onion strips, moulded into the shape of a volcano.

The offering is topped with Japanese mayonnaise, okonomiyaki sauce and bonito flakes.
