ZAKU – Japanese Sumiyaki Restaurant at Capitol Piazza

No offence to anyone, but Capitol Piazza looks like it is off to a shaky start food-wise. Other than headliners Dazzling Café and Angelina Singapore, the other cafes and restaurants could need stronger marketing efforts.

ZAKU by American Chef Dan Segall was one of the restaurants I was looking forward to. Chef Dan had an impressive resume – Zuma in Hog Kong, M1NT in Shanghai, and the former KU DE TA at MBS.

The Japanese restaurant with a European touch offers skewers, salads, mains, vegetables, and hotpot rice, along with a number of premium and exclusive sake labels.

Not every item on the menu is available yet though. Do check with the staff, as markings done by orange stickers on every menu differs (which I found out was because the stickers kept falling off).

For a restaurant to be specialising in charcoal-grilled sumiyaki sticks, we were rather disappointed at its initial offerings.

Both the Wagyu Beef Ribeye Cap ($6 each) and Flatiron ($5) were considerably burnt on the edges. Though for parts that weren’t charred, we liked its base sauce. (The ribeye came with smoked chilli rub and sweet soy.)

The main, a Tamari-Braised Pork Belly dish ($28) was small in portion for its price, a couple of 4-5 pieces of belly in a small bowl. With that said, we liked the soft daikon in a comforting tasty broth, though the pork belly itself seemed lacking in flavour.

Service was polite and professional. A promising private dining area is available on the second floor, though the occasional mosquito is something diners may need to still deal with while renovation works are carried out in other shops.
