After close to a year’s break, the hunky brothers ramen is back. Office ladies working around Tanjong Pagar can get ready your tissue to wipe off your saliva … after you finish your ramen.
Run by brothers Cai Weili and Weisheng, the Japanese ramen shop which used to be called Homebaked Dough and located at a coffeeshop within Tanjong Pagar Plaza, found a new location at nearby International Plaza.
This time, it is a restaurant, with a self-service vending machine.
Several other things have changed though. The ramen is of entirely different taste from its former, prices have went up, the brothers have become a lot more beefed up (T-shirts not so tight anymore though), and they are both well, taken.
The vending machine system needs some getting used to. Only cash or NETs accepted for now, and no coins allowed. (This is the same system as Insadong Korea Town at RWS)
Selection available included Brothers Ramen ($12.90), Chicken Ramen ($12.90), Spicy Ramen ($13.90), Chashu Ramen ($14.90) and the Supermen ($16.90) which would come with more pieces of pork chashu.
I remember their ramen quite fondly, so after taking my first mouthful, I realized that the entire taste and texture is quite different.
My suspicions were confirmed. They now handmake their own noodles, therefore the strands are more eggy and perhaps less springy, and the soup is cooked with a combination of pork, chicken, fish and vegetables, rather than just pork in the past.
The soup has a ‘cleaner’ and more localized taste, but I somehow preferred the former rich (and oiler) version. Sorry brothers!
The Cai brothers have come a long way since learning how to make ramen from youtube videos. I am indeed happy and proud of them, that they keep improving to make their craft better. Certainly an inspiration for young hawkers out there.
