Syun – Celebrity Chef Hal Yamashita’s Japanese Restaurant At RWS Delights

The term “celebrity chef” may have been overused in Singapore, and may not prove to be the marketing tool to an instant hit, judging the bailout of “celebrity restaurants” here.

Syun helmed by Japanese Chef Hal Yamashita is the latest to join Resorts World Sentosa RWS at Festive Walk in their line-up of celebrity chef restaurants, and has proven to be rather promising.

This was my choice of my birthday meal, despite it being untried, untested, un-reviewed yet. Perhaps there was something about the name “Syun”, meaning spring time, signifying a season of new beginnings.

Chef Hal Yamashita comes from Kobe, and runs nine restaurants in Japan. Thus, it won’t be surprising to find beef from Kobe here, as well as the top grade Hida beef from Gifu Prefecture and Omi beef from Shiga Prefecture.

The lunch and dinner menus were rather different, with the lunch focusing on sushi rolls and jyu box sets, while the dinner offered 5 and 7 course sets ($95 and $120 respectively) with ala carte items.

This is one of those restaurants that I liked immediately upon stepping in, warm and professional Japanese service, Japanese Wabi-sabi concept for its décor, and natural wood used for its furniture, beaming with rustic elegance.

My friend who was a self-proclaimed Japanese cuisine fan was delighted, “I can smell wood in the air.”

We both enjoyed our Seafood House Special Jyu ($48) and Chirashi Sushi Box ($32), served with miso soup, kailan, tofu, steamed egg custard and green salad with yuzu ginger dressing.

The boxes were beautifully presented, neatly arranged with seafood, largely unadulterated so that you could taste the freshness of its ingredients.

I preferred the Chirashi because the Seafood Special which was marred by the mushy prawns. Unfortunately, the lunch offering was rather limited and we wished for some options of starters for variety.

In a country where we find many Japanese restaurants rather overpriced, with or without a celebrity chef, we are glad to have Syun which offers quality food, personable service at a reasonable price point. Will be back for dinner, I guess.
