An entire shop dedicated to selling Chawanmushi 茶碗蒸し. Very brave indeed. Come to think of it, we often order this steamed egg dish at Japanese family restaurants, but usually only as an appetizer.
Mushi Mushi at International Plaza offers a range of Chawanmushi served contemporary style, made with freshly brewed stock from kombu and bonito flakes. They looked to be enjoying rather brisk business when I paid a visit after lunch, with many office workers ordering takeaways.
The owners wanted this new concept to offer chawanmushi as a snack, or even as a meal, and engaged Japanese chefs to guide them on the art of brewing our stock base from raw ingredients.
The varieties of chawanmushi available included Ranpaku Mushi – Pure Egg White Chawanmushi ($3.50), Kinoko Mushi – 4 different types of mushrooms ($3.50), Kani Mushi – Real Crabmeat immersed in Mushi House Blend Sauce ($4.50), and Ikura Mushi – Classic Mushi with salmon roe topping ($4.90).
Mushi Mushi’s chawanmushi had a smooth and silky texture, which would quickly slide down your throat. Taste wise, it was more towards the lighter side and thus felt sweeter than savoury and creamy.
My favourite part was the lavish toppings of delicious bright orange salmon roe on the Ikura Mushi ($4.90), that did not taste too fishy as well.
On my wishlist, is an All-In Mushi, with some of my favourite items such as kamaboko Japanese fish cake, shiitake mushrooms, ginkgo nuts and a stronger touch of mirin for this bowl to be considered as a more filling bowl on its own.
