Bari Uma Ramen – One of the Most Underrated Ramen Shops in Singapore

Bari Uma Ramen at Tanglin Shopping Centre can be considered one of the most underrated ramen shops in Singapore. It is being hidden in the corner of an old building, even if it is near the Orchard Road belt. Having a name similar to the better known Uma Uma Ramen which is a distance away did not help.

Most Singaporeans have a preference for milky tonkotsu soup, partly because our taste buds tend to gear towards the thick and flavourful. While shoyu based ramen typically has a clear brown broth which is light on the palate, Bari Uma’s version is a richly flavoured tonkotsu shoyu soup.

Hailing from Hiroshima, the recommended ramen is the Ajitama-Uma ($15), with thick cut flamed chashu, uncut egg and shoyu soup. The soup is cooked for 6 hours using both pork and chicken bones with various vegetables.

Compared to all the other ramen in in Singapore, every spoonful of Bari Uma’s broth is super rich, layered with flavours and you just can’t help slurping away. Unless salty soups are not your cup of tea.

It is not just the taste of the ramen, the temperature is just as important to me. Many ramen I had at other places could arrive lukewarm, and you wonder what went on in the kitchen. Bari Uma’s version remains warm throughout and not just the first few mouthfuls.

My favourite is the Kara Uma ($16) where the spiciness of the soup may send some sweat down your forehead. A testament to its taste and authenticity is the number of Japanese spotted in the restaurant.

This is one of the few ramen shops which also specialise in Yakitori, with sticks of 2 costing $6.00, and a combo of 5 sticks such as pork belly, chicken thigh and gizzards at $14.80. The sticks are not their strength though, with some tasting rather dry and tough.

When it comes to ramen, I would like to support a deserving underdog.
